Amount Ingredient
1/2 cup all-purpose flour PLUS
1/2 cup all-purpose flour as needed
4 cup whole wheat flour
1/2 cup instant whole wheat cereal
2 pkt active dry yeast
1 tbl salt
1 tsp anise seed
1 tbl grated orange peel
1/2 cup water
1/2 cup orange juice
1/2 cup honey
Instructions:
Instructions: Place 1+1/2 cups all-purpose flour, whole wheat flour, wheat cereal, yeast, salt, anise seed, and grated orange peel in bowl. Attach bowl and dough hook. Turn to speed 2 and mix 30 seconds.

Combine water, orange juice, honey, and butter in saucepan. Heat over low heat until liquids are very warm (120 degrees F to 130 degrees F). Turn to speed 2 and gradually add warm liquids to flour mixture, about 1 minute. Mix 2 minutes longer. Continuing on speed 2, add remaining flour, 1/2 cup at a time, until dough clings to hook and cleans sides of bowl. Knead on speed 2 for 2 minutes longer.

Place in a greased bowl, turning to grease top. Cover, let rise in warm place, free from draft, until doubled in bulk, about 1 hour.

Punch dough down and divide in half shape each half into a loaf and place in a greased 8-1/2 x 4-1/2 x 2-1/2-inch loaf pan. Cover; let rise in warm place, free from draft, until doubled in bulk, about 1 hour.

Bake at 375 degrees F for 35 to 40 minutes. Remove from pans immediately and cool on wire racks.

Yield: 2 loaves.
