2 lb Oregon Dungeness Crab Meat
2 can Artichoke heart quarters, very well drained (14 ounce)
1 x 4 ounces jar diced red pimientos
12 oz Parmesan cheese* grated, (reserve 3 tablespoons for topping)
8 oz Sharp cheddar cheese, grated
1 lrg Onion, thinly sliced
1/2 cup Mayonnaise
1/4 cup Parsley, chopped
1 med Lemon, zest and juice
Instructions:
Instructions: *Asiago cheese may be substituted

Preheat oven to 400 degrees. Thoroughly drain crab meat, artichokes and pimientos. Combine and mix all ingredients. Place mixture in ovenproof serving dish. Sprinkle reserved 3 tablespoons cheese to coat the top. Bake in center of oven for 20 to 25 minutes or until top is slightly browned.

Makes 12 to 16 servings as an appetizer; 6 to 8 as an entree.
