Ingredients:

1 cup	Self rising flour
2 cup	Self rising cornmeal
3 tbl	Sugar
1/2 tbl	Baking powder
4 tbl	Oil
2 x	Eggs, beaten
1 lrg	Onion, finely chopped
1 x	Jalapeno pepper, finely chopped or ground in food processor optional

Instructions:

Instructions: Combine flour, cornmeal, sugar and baking powder in a large bowl and mix well. Combine oil, eggs, onion, pepper and buttermilk, stirring well. Add to dry mixture and mix well. Batter will be stiff. Use 2 tablespoons of batter (or an ice cream scoop) to form each hush puppy. Drop into hot oil

(350 ) and fry approximately 4 minutes or until brown.

Yield: 20-25 hush
