Instructions: Cook the bacon in a large, heavy saucepan over medium heat until crisp, about 8 minutes. Using a slotted spoon, remove the bacon to a paper towel. Pour off all but 2 tablespoons drippings from pan. Add the butter to the drippings and heat until butter begins to brown, about 2 minutes; stir in the orzo. Add 4 1/2 cups broth; simmer uncovered until orzo is just tender, but still firm to the bite and broth is absorbed, stirring often, about 8 minutes. Add cream; bring to a simmer. Remove from the heat. Mix in the cheese and thyme, then add the bacon.
Season with salt and pepper. Thin with the remaining 1/2 cup broth, if desired. Email this Recipe:
