Ingredients:

1 lb	Orzo, cooked
1/2 cup	Sundried tomatoes in oil
1/2 cup	Greek olives, sliced
1/2 cup	Artichoke hears, quartered
1 sm	Red onion, mince
1 x	Red pepper, roast, 1" strips
2 tsp	Thyme leaves, chopped
2 tbl	Balsamic vinegar
4 tbl	Extra-virgin olive oil
1 tbl	Italian parsley, chopped
	Salt and pepper
1 lb	Shrimp, cooked, optional

Instructions:

Instructions: Put cooked orzo in a bowl with the other ingredients while still warm.

Stir well to combine.
