Ingredients:
Amount Ingredient
3 lb Ostrich steak cut into 1" cubes
4 tbl Flour
1/4 lb Pork (with some fat) cut into 1/4" strips
2 tsp Salt
2 tsp Freshly-ground black pepper
2 x Garlic cloves peeled, halved
4 tbl Vegetable oil
1 tbl Tomato paste
1 x Bay leaf
1 tsp Fresh or ground thyme
3 cup Red wine
3 x Carrots sliced in rounds
6 med Fresh mushrooms sliced
1/2 lb Small white onions peeled
Salt to taste
Instructions:
Instructions: Saute the pork and ostrich in the oil in a large heavy skillet. Place the carrots in the skillet and brown them briefly. Stir in the flour. Pour the wine in the skillet and simmer for a minute scraping the side and bottom well. Add the remaining ingredients. Cover and simmer for 2 hours. Remove the bay leaf before serving.

This recipe yields 8 servings.
