2 lb beef stew meat trimmed
4 med potatoes cut 1" chunks
6 med carrots cut 1/2" chunks
1 med onion chopped
2 cup tomato juice
1 cup water
3 tbl quick-cooking tapioca
1 tsp sugar
2 tsp salt
Instructions:
Instructions: Preheat the oven to 350 degrees. Coat a 9- by 13-inch baking dish with nonstick cooking spray.

In the baking dish, combine the beef, potatoes, carrots, and onion, mix well. In a large bowl, combine the remaining ingredients, mix well. Pour over the beef and vegetables.

Cover tightly with aluminum foil and bake for 2 to 2 1/4 hours, or until the beef and vegetables are tender.

This recipe yields 6 servings.

Comments: This is the perfect dish for a make-ahead dinner. Just put it together, cover, and chill. Start baking it 2 1/2 to 3 hours before serving.
