3 med fennel bulbs
1/4 cup extra-virgin olive oil
Coarse salt to taste
Instructions:
Instructions: Heat oven to 350 degrees. Trim fennel bulbs and slice lengthwise into 1/4-inch thick slices. Arrange fennel in a single layer in a baking dish or roasting pan. Drizzle with olive oil, and sprinkle with salt and pepper.

Cover with a lid or parchment paper and aluminum foil. Bake until fennel is light golden brown and tender at the base when pierced with the tip of a paring knife, 45 minutes to 1 hour. Serve hot or at room temperature.
