Instructions: Combine chicken with rice, crumbs, salt and broth. Add eggs; stir in pimiento.
Pour into greased 9" square baking dish. Bake in moderate oven (350 F.) 1 hour, or until firm. Meanwhile, make sauce. Melt butter; add and brown mushrooms. Stir in flour, salt and pepper. Add chicken broth and cream. Cook until thickened, stirring. Add lemon juice, paprika and parsley. To serve, cut warm chicken loaf in squares; serve with mushroom sauce. Makes 6 to 8 servings.
