Instructions: Heat oven to 250 degrees. Line two baking sheets with parchment, and set aside. Place tomatoes, cut sides up, on prepared baking sheets. Brush tomatoes with olive oil, and season with salt and pepper. Sprinkle sugar and thyme over tomatoes. Transfer baking sheets to oven. If using a gas oven with a pilot light: Bake 2 hours, then turn off the heat and leave overnight. If using an electric oven: Bake 2 hours, then turn to warm and leave overnight. Serve these tomatoes as part of an antipasto or over grilled bread as bruschetta.
