Instructions: Heat oven to 250 degrees. Line two baking sheets with Silpats (French nonstick baking mats). Peel pineapple and slice crosswise into 1/8-inch thick slices. Place pineapple slices in a single layer on prepared baking sheets. Sprinkle sugar over pineapple slices.
Bake until edges are golden brown, 2 to 2 1/2 hours. Transfer to a wire rack to cool completely. Store in an airtight container for up 2 days. This recipe yields 2 dozen. Email this Recipe:
