2 lb Stingray fillets
1/4 cup milk
1 x egg
1 cup fine cracker crumbs
3 tbl butter or margarine melted
1 lrg onion sliced
Salt to taste
Instructions:
Instructions: Preheat oven to 375 degrees. Wash Stingray and blot dry with paper towels. Cut into serving-size pieces.

Beat egg and milk together. Dip each piece of Stingray in egg/milk mixture and then coat with cracker crumbs. Place breaded Stingray pieces in a greased shallow baking pan. Top each Stingray piece with a slice of onion and some of the melted butter or margarine.

Bake for 15 to 20 minutes. Serve with lemon wedges.

This recipe yields 6 servings.
