Instructions: Place the milk eggs and sugar in bowl and whisk together.
Gradually incorporate the flour a little at a time whisking until smooth. Leave for about 30 rainutes. Heat the butter in a 28cm x 18cm deep roasting tin in a preheated oven (220C/425F/Gas Mark 7) until hot. Pour in the batter and return to the oven for 35 minutes until puffed up and golden brown. For the berries melt the butter and sugar in a pan add the berries cook for 2 to 3 rninutes remove from the heat add a slash of gin and serve with the hot pancake. Snip open a few cardamom pods crush the seeds and stir them into the batter for added authenticity. Serves 6 Email this Recipe:
