Instructions: Preheat the oven to 350 degrees. In a large saute pan, cook the onions until caramelized. Remove the pan from the heat and add the spinach. Taste for seasoning. Lay a banana leaf out and fold in half. Place a small mound of rice on the leaf and top with the vegetable mixture. Place a serving of salmon on top of vegetables and smother the paste over the salmon. Bake for 20 minutes. Garnish with the chopped scallions.
