Instructions: Cut the beef tomatoes in half horizontally and season with salt and pepper.
Mix the diced mozzarella with the breadcrumbs garlic and seasoning. Place the tomato halves cutside up in the small roasting tin. Spoon the crumb mixture on top of the tomatoes and drizzle with the olive oil. Hang the tin from the top set of runners in the roasting ovenand bake for 10 to 12 minutes or until golden brown. Large tomato halves are baked with a mozzarella and garlicflavoured breadcrumb topping to make this appetizing accompaniment which goes well with most meat and poultry dishes.
