Instructions: Prepare snap peas by cutting off the tips on each end of the pods.
Preheat oil in a wok or medium skillet over medium/high heat. Saute snap peas in oil with salt and black pepper for 2 1/2 to 3 minutes until peas are cooked, but still crispy. The pods should have some dark brown spots developing on them when theyre done. Add minced garlic and stir well to combine. Remove from heat immediately and serve. The garlic should not stay in the pan for longer than 15 to 20 seconds or it could burn and turn bitter. This recipe yields 2 to 4 servings. Comments: Its an awesome side dish at one of the countrys hottest dinner chains, and itll take you just minutes to clone at home as a side for any entree you whip up. You can use a wok if youve got one, but a medium skillet works fine. The trick is to only saute the peas until they are hot, but still crispy. And youve got to watch the garlic closely when you add it. If you cook the garlic too long over high heat itll burn and give an otherwise fab dish a big bummer of a bitter taste. Email this Recipe:
