1/2 cup rice wine vinegar
1/2 tbl honey
1 tbl finely-minced shallot or red onion
1 tbl sake wine
1/4 tsp coarsely-ground black pepper
1/4 tsp dried red pepper flakes
1/4 tsp salt
2 tsp chopped parsley
2 tbl finely-minced English or regular cucumber
2 tbl finely-minced celery
2 tbl finely-minced red bell pepper
1 tbl very thinly-sliced green onion
Instructions:
Instructions: Combine the vinegar, honey, shallot, sake, black pepper, red pepper flakes and salt in a small non-corrosive saucepan. Over high heat, bring the mixture just to a quick boil and then take the pan from the heat. Let cool to room temperature and refrigerate until well chilled. When the mixture is thoroughly chilled, add the remaining ingredients and refrigerate.

This recipe yields 1 generous cup.

Comments: This is a tart and tangy twist on the mignonette traditionally served with raw oysters. Diced vegetables add a refreshing crunch.
