Ingredients:

4 x chicken breasts
salt, pepper
2 tsp garlic, crushed
4 tbl olive oil
500 gm Italian sausages
1/2 x red capsicum
1/2 x green capsicum
200 gm prawns, raw
2 cup rice, long grain
4 cup chicken stock
1/4 tsp saffron
24 x mussels
Instructions:
Instructions: Slice the sausages. Peel and devein the prawns.

Dice capsicum.

Season the chicken.

In a large pan with a lid, saute the garlic in the oil. Add the chicken and brown it for about 5 minutes. Add the sausage and cook for 5 minutes.

Put the rice in the pan, stir the saffron into the liquid, and pour it over the rice. Stir well and put the lid on the pan. Cook it all slowly until the rice is tender.

Add the prawns, scallops and mussels and cover the pan again to steam them open.
