Ingredients:
Amount Ingredient
1 cup canned fava beans, drained and rinsed
1 cup canned lima beans, drained and rinsed
1 cup canned chickpeas, drained and rinsed
1 cup fresh or frozen corn kernels
1 cup pomegranate seeds
OR cubed pickled beets
1 tbl red wine vinegar
2 tbl extra-virgin olive oil
Instructions:
Instructions: Makes 10 1/2-cups. VEGAN

If you cant find pomegranate seeds, try cubed beets instead.

In large saucepan, combine beans, adding small amount of water. Simmer until heated through.

In large bowl, add beans, corn, pomegranate seeds or pickled beets and salt to taste. Mix together gently.

In small bowl, mix together vinegar, oil and salt to taste; pour over bean mixture and gently mix.

Makes 10 1/2-cups.
