Instructions: Place lentils, water, onion, garlic and cumin in medium sauce pan. Bring to boil, reduce heat, cover, and simmer until tender, about 25 minutes. Remove lentils from heat and stir in salt. Spread 1/2 cup of the lentil mixture down the center of each tortilla. Top with 1/4 cup cheese and hot sauce to taste (try between 1/4 - 1/2 teaspoon for mild/hot). Roll tortilla up and place seam side down in 9" x 13 " pan. Cover with cookie sheet or aluminum foil. Bake for 25 minutes at 400 degrees.
