2 sm squash peeled and seeded
2 tbl olive oil
1 x thick slice butter
2 clv garlic crushed
1 x mild chilli seeded and chopped
Instructions:
Instructions: Cut the squash into thick slices this keeps it moist when frying.

In a shallow frying pan heat the olive oil and butter add the garlic and chilli and fry until their fragrance rises.

Add the squash and cook until golden adjusting the heat so that the oil does not burn.

Drain on kitchen paper and season with black pepper.

Sprinkle with Parmesan and eat with bread and beer.
