680 gm potatoes
230 gm onions
15 gm butter or margarine
1 tbl oil
170 gm mature Cheddar cheese grated
1 x salt and pepper
Instructions:
Instructions: Peel the potatoes and onions and cut into thin slices.

Heat the butter and oil in the frying pan.

When foaming add a layer of potatoes then a layer of onion and grated cheese.

Season well.

Continue layering up seasoning each layer and finishing with a layer of cheese.

Cover the pan with a lid or baking tray and cook gently for about 45 minutes or until the vegetables are cooked.

Remove the lid and brown the top under a hot grill.

Serve immediately.
