2 oz olive oil
(8-ounce) boneless, skinless chicken breast (diced into half inch cubes)
2 tbl garlic (minced)
4 oz stewed tomatoes
2 oz toasted almonds (sliced or chopped)
1/2 cup white wine
6 oz heavy cream
4 x to 6 ounces blue cheese
5 oz gnocchi (par cooked)
Instructions:
Instructions: Heat saute pan to smoking point (375-390 degrees). Add diced chicken and minced garlic. (Do not burn garlic because it will give the sauce a bitter flavor.) Saute chicken and garlic until garlic starts to turn a cocoa color.

Deglaze pan with white wine and reduce to au sec. Add toasted almonds and stewed tomatoes. Add heavy cream and blue cheese; combine well. Add par-cooked gnocchi; toss. Adjust seasonings with salt and pepper. Serve immediately.
