Instructions: Mix the crab ingredients and portion into 3 ounce cakes.
Dice the onion and place into a very hot skillet. When the onion turns brown add the cream and let this simmer until it reduces by half. Season the sauce with salt and pepper In a hot pan sear the meat on each side till dark brown and finish in the oven to the desired temperature. In another pan with a little oil cook the crab cakes for 2 to 3 minutes on each side. For assembly top each steak with a crab cake and coat with the onion sauce. This recipe yields 6 servings.
