Instructions: Lightly dust the pork with flour. Sprinkle with salt and pepper on one side.
Heat oil in a sprayed nonstick skillet; place the pork, seasoned side down, into the oil. Sprinkle the up-side with salt and pepper. Sear the pork, undisturbed, for 4 minutes. Turn the pork over. Add the thyme, garlic, green onions and celery. Sear the pork for no more than 2 minutes. Add the mustard; stir to warm and stir a little of the apple juice into the mustard to thin. Add remaining apple juice. Reduce heat and braise for 5 minutes, covered loosely (with a splatter screen). The gravy will cook down; add a little juice as needed. POINTS without side dishes: 4 TIP - Make extra pork now. Either freeze the cooked pork for sandwiches or refrigerate and use within a day or two for a main dish pasta salad.
