1 lb loaf italian country bread sliced 1 inch thick
1 x red onion thinly sliced
1 x cucumber peeled seeded and sliced
6 x ripe tomatoes diced
20 x fresh basil leaves cut into thin strips
1 cup black olives pitted and halved
3 oz scamorza cheese (smoked mozarella) cut into 1/2 inch cubes (about 3/4 cup)
1/2 cup extra virgin olive oil
3 tbl red wine vinegar
Instructions:
Instructions: In a large bowl soak bread in cold water to cover for 3 minutes.

Squeeze out excess water and tear bread into small pieces.

Put in a large salad bowl with onion cucumber tomatoes basil olives and cheese. In a small bowl whisk oil and vinegar together.

Toss with salad and add salt and pepper.

Made from stale country bread and tomatoes it is a peasant dish usually attributed to Tuscany or Rome. Cubes of scamorza the italian smoked mozzarella that usually comes in a braid make this version more interesting.
