Instructions: When potatoes are cool enough to handle, chop or slice in irregular pieces. Fry in the oil until golden brown. Takes 15-20 minutes.
Warm red chili gravy, while potatoes cook. When potatoes are almost ready, fry eggs one at a time. To assemble: put fried potatoes in 4 soup bowls, drench with 1/3 - 1/2 c. red chile gravy, sprinkle with grated cheese, green onions and a heaping tablespoon of sour cream. Top with fried egg.
