Instructions: Parmesan is the best known among italian cheeses and one of the most tasty cheeses in the world. It is made mostly in Parma but also in Bologna and Modena. It is matured for between eighteen months and two years before going into the market and its production is governed by strict regulations. It should have a mellow rich flavour and a satisfying crumbly texture. The large wheels exported from Italy will always have the words Parmigianoreggiano printed on the side. When grated Parmesan is called for in a dish it is infinitely better to grate it freshly.
Unique cheese grated and added to sauces pasta rice and other dishes to give an incomparable flavour. It is best bought by the piece; packets of ready grated Parmesan cannot compare with the freshly grated cheese. Email this Recipe:
