chive vinaigrette:
2 tbl fresh lemon juice
1/4 cup finely snipped fresh chives
1/4 cup extravirgin olive oil
1/2 tsp ground pepper
1/4 tsp salt
4 cup flat leaf parsley leaves (about 2 good sized bunches)
Instructions:
Instructions: Whisk all vinaigrette ingredients together until well blended or process in a blender or food processor. (Latter method will puree chives giving dressing a lovely green colour.)

In a large bowl combine parsley and mushrooms and toss with vinaigrette. Sprinkle with parmesan cheese.

We suggest flatleaf as opposed to curly parsley because of its more robust flavour.
