Instructions: Whisk all vinaigrette ingredients together until well blended or process in a blender or food processor. (Latter method will puree chives giving dressing a lovely green colour.)
In a large bowl combine parsley and mushrooms and toss with vinaigrette. Sprinkle with parmesan cheese. We suggest flatleaf as opposed to curly parsley because of its more robust flavour. Email this Recipe:
