2 tbl white wine vinegar
2 tbl lime juice
1 x egg yolk
1 whl egg
1 tsp fine grain salt
1 tsp dry mustard
1/4 tsp sugar
2 cup safflower or corn oil - (scant)
(2 cups minus 2 to 3 tbspns)
Instructions:
Instructions: Add all wet ingredients (except the oil which is a liquid but isnt "wet") to the work bowl of a food processor along with the salt, mustard and sugar. Pulse 5 times. Turn processor on and add oil in a steady stream until incorporated. Keep at room temperature for 2 hours. Refrigerate for up to 1 week.

This recipe yields 2 1/2 cups.

Caution: The American Egg Board states: "There have been warnings against consuming raw or lightly cooked eggs on the grounds that the egg may be contaminated with Salmonella, a bacteria responsible for a type of food poisoning.... Healthy people need to remember that there is a very small risk and treat eggs and other raw animal foods accordingly. Use only properly refrigerated, clean, sound-shelled, fresh, grade AA or A eggs. Avoid mixing yolks and whites with the shell?
