Instructions: Cut the passion fruits in half and scoop out all the juice seeds and membranff.
Liquidize the passion fruit pulp and pass through a fine sieve. Make a sugar syrup by combining the water and sugar in a saucepan bringing it to the boil and simmering it for fiffeen minutes. Pour the syrup over the strained pulp. Leave to cool. Before turning in an ice cream machine add a squeeze of lemon juice. The passion fruit should be deep purple in colour and beginning to shrivel and wither. That way they will be ripe. Serves 4 Email this Recipe:
