Instructions: In a large skillet, heat the oil over medium-high heat. Cook the scallions, red pepper, and tomato for 5 to 7 minutes, or until the vegetables are tender. Add the capers and basil and continue stirring. Add the ricotta, pepper, and salt. Simmer until the in- gredients are blended.
