Instructions: Place flour, salt and oil in a food processor. Add eggs, keeping 1 white separate. Blend until smooth. Check dough for consistency, it should be firm and relatively dry. Add more flour or a small amount of water if necessary.
Knead for 5 minutes until smooth and glossy. Roll through a pasta machine into desired shape ie. tagliatelli, spaghetti etc. Cook for 1-2 minutes in a large pot of boiling salted water. If you are not using pasta straight away, refresh in cold water, drain well, toss in 1 Tblsp oil to coat (this stops pasta sticking together), cover and refigerate until required. You can roll pasta with a rolling pin by hand but it is a lot more difficult to achieve as good a result. Email this Recipe:
