Instructions: Melt half the butter in a shallow pan and add the chopped onion and garlic.
After 10 minutes or so over a moderate heat both should be soft and golden. Dont let them brown as this would change the flavour of the dish altogether. Add the tomatoes and the basil and cook for about 15 minutes to reduce the sauce to a thick gunge. Taste and season with salt and black pepper then toss with the cooked spaghetti. Meanwhile heat the remaining butter in a large frying pan. Add the pasta mixture or as much as will comfortably fit into your pan in one thin layer. Without stirring cook for about 10 minutes on a moderate heat. Lift now and again with a palette knife to check on the state of bottom which should have formed a crust. Using a large flat slice lift the pasta mixture over and cook the other side taking care not to burn it. Serve hot with a salad on the side. Serves 2 Email this Recipe:
