1/2 cup cooked angel hair pasta (about 5 ounces uncooked pasta)
3/4 cup chopped plum tomato
1/2 cup chopped red bell pepper
1/2 cup chopped yellow bell pepper
1/3 cup chopped green onions
2 tbl fresh lemon juice
1 tbl chopped pitted kalamata olives
1 tbl olive oil
1/2 tsp chopped fresh or 1/2 teaspoon dried thyme
1/2 tsp white pepper
1/4 tsp dried oregano
3/4 lb cooked medium shrimp peeled and deveined
1 x garlic clove minced
1/2 cup crumbled feta cheese (2 ounces)
Instructions:
Instructions: The fresh, fruity flavors of this salad pair well with a spicy shrimp, chicken, or pork dish. In place of pistachios, you could substitute toasted almonds, pine nuts, macadamia nuts, or hazelnuts.

Combine the first 13 ingredients in a large bowl. Sprinkle with cheese and parsley.

Yield: 5 servings (serving size: 2 cups).
