Instructions: Sauce pasta while its hot. I drain the pasta and return it to its cooking pot, add a ladle of the sauce and toss to evenly distributed it, and then toss the pasta with enough remaining sauce to thoroughly coat it.
Toss cheese with the pasta at the last minute. Otherwise the heat will cause the proteins of the cheese to separate from the fat, and you might end up with stringy cheese and oily pasta. Email this Recipe:
