Instructions: In large soup pot, brown the sausage in olive oil. Drain off half the fat.
Add the onion and stir until soft. Add the garlic and cook for 1 minute, being careful not to burn. Add the other ingredients except the macaroni and the cheese. Simmer 2 hours, the increase the heat to medium high and add the pasta. Cook an additional 30 minutes. Serve in soup bowls with freshly grated cheese on top. Email this Recipe:
