Instructions: Plain pasta can also be used, you can add a dash of ground black pepper, and tsp. fresh basil to pick up plain pasta.
Boil water and cook pasta, while pasta is cooking clean and drain spinach. Warm olive oil over med heat, add minced garlic and saute lightly, about 2 min. not brown. Add spinach over med-high flame and stir fry for about 5-8 min. till reduced and limp. Rinse and drain pasta add a drop of olive oil to keep pasta from sticking. Place spinach on a bed of pasta top with feta and olives and serve hot. Email this Recipe:
