Instructions: Cook pasta in a large pan of boiling salted water. Drain well and set aside.
Prepare the sauce: Dice onion, bacon. Slice mushrooms. Heat oil in a pan; add onion, bacon, garlic, chicken livers and cook 3 minutes until onion is softenned. Add mushrooms and cook, stirring, 2 minutes. Add wine and stir through for 2 minutes until mushrooms are soft. Stir in cream and bring to the boil. Reduce heat and simmer 3 minutes. Season well. Quickly stir in beaten eggs and remove pan from heat, season and pour immediately over hot pasta. Top with cheese and parsley. Serves 4. Email this Recipe:
