2 med brown onions (300g), chopped coarsely
2 x cloves garlic, quartered
1 cup semi-dried tomatoes in oil, drained
1/4 cup tomato paste
2 x red Thai chillies, finely chopped
2 cup beef stock
375 gm pappardelle (or pasta of your choice)
Instructions:
Instructions: Blend or process onion, garlic, tomatoes, paste and chilli until mixture forms a paste. Heat large non-stick pan. Cook tomato mixture, stirring, 10 minutes. Stir in stock, bring to the boil.

Reduce heat, simmer sauce uncovered for about 10 minutes, or until slightly thickened. Cook pasta in large saucepan of boiling water until just tender, drain. Just before serving, gently toss pasta through sauce, sprinkle with parsley. Serve with shaved parmesan cheese.
