Instructions: Clean and stem the silverbeet and spinach leaves. Wash well. Cut the greens into strips and dry.
Dice onions and bacon. Bring plenty of water to boil to cook the pasta. Heat butter in a pan, add onion, bacon, and minced garlic, cook over low heat 2-3 minutes to soften. Add greens, cover and cook until the greens just wilt, about 1 minute. Add the cream and simmer 2 min. then add the egg yolks and cook until thickenned. Do not boil. Meanwhile, cook the pasta in boiling water. Drain and toss it with the greens and butter. Season with parmesan and pepper. Email this Recipe:
