Ingredients:
Amount Ingredient
1 tbl olive oil
1 x onions, medium
2 tsp garlic, crushed
1 tbl tomato paste
1/4 cup white wine
200 gm pimento
425 gm whole peeled tomatoes
1/2 tsp sugar (caster)
1/2 tbl olives, black
1 tbl basil, chopped
1 tbl parsley, chopped
1 tbl lemon juice
salt, pepper
Instructions:
Instructions: Cook the spaghetti in boiling salted water for 12 minutes or until al dente. Drain and set aside.

Pimento, Tomato and Olive sauce:
Dice onions, olives, tomatoes, pimento.

In a pan, saute the diced onion and garlic in olive oil until tender . Add the white wine, sugar, tomatoes with their juice, tomato paste and pimento. Stir in the seasoning and simmer gently for 1/2 hour until slightly thickenned.

Just before serving, add the olives, basil and lemon juice to taste, and pour sauce over hot pasta.

Serves 4.
