Instructions: Tip the orechiette into salted boiling water and cook until al dente.
Fry the onion in 3 tbsp of olive oil until nicely browed. Set aside. Reheat when the pasta is cooked. Drain the pasta tip into a bowl and toss with the rest of the oil the cheeses fried onion and pepper to taste. Sprinkle with parsley and serve immediately Serves 4 Its a simple pasta dish but one that always pleases. For some reason I have particularly taken to orechiette "earshaped" pasta. I enjoy the feel of its curves against the tongue but any pasta shape will do. Email this Recipe:
