3 tbl Olive oil
2 x Cloves minced garlic
2 lb Very ripe fresh tomatoes, peeled
1/2 tsp Salt
1/3 cup Fresh chopped basil
1/2 cup Wine
Black pepper
1/2 cup Heavy cream
Instructions:
Instructions: Heat oil in skillet. Saute garlic in oil for 30 seconds, stirring constantly. Remove skillet from heat. In a food processor or blender, combine peeled tomatoes, salt and chopped basil. Process until combined, but still a little chunky. Return skillet to heat. Pour in tomato mixture and add wine. Simmer over low heat for 7 to 8 minutes. Season to taste with pepper. Stir in cream and heat (over low) until warm throughout. Serve over your favorite pasta, prepared according to package directions.
