Instructions: While the pasta cooks place passata or liquidised fresh tomatoes and cream in a small pan.
Simmer for 5 minutes to thicken slightly stirring occasionally. Draw off the heat let the bubbles subside stir in the vodka and season. When the pasta is ready bring tomato mixture back to the boil and pour over the pasta. Spoon the caviar on top and sprinkle with chives. Toss at the table and serve. If you really cant bear the thought of throwing your caviar into a bowl of pasta replace with 110g of finely diced and deseeded tomatoes for a more everyday concoction. Serves 2 as a main course (4 as a starter) A simple yet elegant dish of pasta dressed with a creamy tomato sauce and spiked with vodka.
