1 med red onion, thinly sliced
2 med garlic cloves, minced
2 med ripe tomatoes, (2 cups)
seeded and chopped, (2 cups)
1/4 cup balsamic vinegar
2 tbl drained capers, drained
1 cup torn arugula leaves
3/4 cup finely chopped fresh basil
12 oz dried spaghetti or angel hair pasta
grated Asiago cheese for garnish, (optional)

Often its the simplest recipes that taste the best. Serve this fragrant pasta dish with French or Italian bread for a scrumptious meal in minutes.

Bring large pot of salted water to a boil.

Meanwhile, in large, deep skillet, heat oil over medium heat. Add onion and cook, stirring often, until tender, about 8 minutes. Add garlic, tomatoes, vinegar and capers and simmer 3 or 4 minutes. Remove from heat and stir in arugula and chopped basil. Season with salt and freshly ground pepper to taste.

Add pasta to boiling water; , stirring to prevent sticking. Cook according until just tender, about 5 minutes. Drain well. Transfer to large serving bowl, add tomato mixture and toss to coat. Sprinkle with Asiago cheese and garnish with basil leaves if desired. Serve right away.
