Instructions: Saute garlic using your favorite saute method (I use chicken stock and a few drops of olive
oil, for taste), until just golden. Add beans, and mash about 1/2 of them with a fork or the back of a wooden spoon. Stir in pepper, vinegar and oregano, and simmer until the sauce thickens to your taste. If it gets too thick, thin it a bit with broth or water. Toss with hot pasta, and sprinkle with fresh grated cheese, if desired. If youre feeling evil, toss in a tablespoon or two of toasted pignoli (pine) nuts. Ive also added fresh steamed broccoli to this, and its great. Email this Recipe:
