Instructions: In a medium bowl, combine
flour, sugar and salt. With a pastry blender or 2 knives, cut butter and shortening into flour until mixture resembles coarse crumbs. Sprinkle almond extract and cold water, one tablespoon at a time, over flour mixture and mix lightly until the pastry holds together when lightly pressed. Shape pastry into 2 equal balls; flatten each to 1-inch thickness. Wrap and refrigerate for 30 minutes.
