2 x Dried red chillies
400 gm Potatoes, sliced into large wedges, skins-on
1 x Spanish onion, peeled and diced
6 x Cloves garlic
1 tsp Cumin seeds
Instructions:
Instructions: Pound the ingredients in a pestle and mortar or electric processor until a smooth paste and spread it on the potato wedges.

Bake in a hot oven (200C/400F/gas 6) for 45 minutes until the centre of the potato wedges are done but not crumbly and falling apart.
