Ingredients:

24 oz chicken livers
1 lb lean ground pork
8 oz pork sausage
1 tbl shallots, finely chopped
2 tbl fresh parsley, chopped
1 tsp freshly ground black pepper
1/2 tsp ground ginger
1/2 tsp ground cinnamon
1/2 tsp salt
2 tbl brandy
2 tbl white wine
Bacon strips
Instructions:
Instructions: In a food processor, combine all of the ingredients, except the bacon and bread, and process until well combined.

Preheat oven to 350 F. Line the bottom and sides of an 8-cup pate mold with the bacon, overlapping slightly. Fill the mold with the mixture in stages, packing down after each addition. Cover the mold with heavy aluminum foil and bake in a hot water bath (about 1 inch around the mold)

for 2 hours 30 minutes.

Cool in the mold with a weight on top of the pate. Slice and serve with the bread rounds.

YIELD: 8 TO 10 APPETIZER SERVINGS
